Afternoon cake

My mum loves granola bars but since we are not eating cereal we needed to come up with an alternative healthy snack.

Initially, this was meant to be a snack bar but it turned out to be a deliciously cake to enjoy with your afternoon tea or coffee.

We used cashew nut flour, banana, dried coconut, raisins and cinnamon.

Unfortunately we didn’t pay attention to how much of each ingredient we used but we mixed everything together in a food processor and then baked for about 30 minutes. When we make it again, I’ll make sure to write down the exact recipe and share here.

Paleo-esque???

I have been following a paleo-esque lifestyle since the March 2016 removing all gluten and industrialized products. I wasn’t very strict and did eat a piece of bread every now and then (I was living in France after all and sometimes could not resist their baguettes).

After I got home my mum and I agreed to go back to a more healthy lifestyle. The month of June and July was intense. We followed the paleo diet 6 days a week and had one cheat day. The first week was tough, we wanted to eat things that we did even eat before. It was all psychological. We would look forward to our cheat day (Saturdays) all week. However, on our cheat day we were not hungry or we would feel sick after eating.

We are learning to appreciate what we eat. We are lucky to have a big garden with fertile land so everything is organic. The sweet potato that we eat is from our garden and it’s so good! We are not eating grains or dairy, which is really hard for us because we love beans and CHEESE! But we are surviving. Most importantly we only eat when we are hungry. My whole life I’ve been told to eat every 3 hours. Well nowadays I eat when I’m hungry and I’m actually losing weight 🙂

I’m not following the paleo diet 100% because I still love food 😛 but I’m learning a lot and I hope to lead a paleo lifestyle but for now I’m just 80% paleo and enjoying 🙂

 

After a week of clean eating we were tired of eating the same things. We don’t have a lot of variety where we live so it was basically the same meals everyday. Broccoli and cauliflower became our signature dish. Thankfully, google exists so I started looking for recipes to try. I came across a cauliflower muffins recipe but instead of using almond flour (it doesn’t exist here) I used cassava (tapioca).

1 cauliflower head

1 egg

1/2 cup of tapioca flour

Mince meat or bacon*

Oregano *

I used a food processor to cut the cauliflower and then mixed on the ingredients. I used the left over meat and cabbage in the mixture which gave an extra taste. Then I baked in a pre-heated oven for 35 minutes.

Every week we get these amazing sweet potato from our vegetable garden. We are very lucky. I never get sick of eating sweet potato. Every recipe that I try with sweet potato is yummy.

I was craving pancakes. It got to the point where I was even dreaming about pancakes. But I wanted the gluten-laden pancakes that I fell in love with in the USA. I decided to improvise since we have a bucketful of sweet potatoes and bananas. Why not combine the too?

  • 3 medium sweet potatoes
  • 3 medium bananas

First, I cooked the sweet potatoes until soft. Then I placed both ingredients in the food processor and mixed in full blast. And that was it. Place an oiled griddle over medium heat. Drop about 1/4 cup batter onto the griddle and cook until edges are dry, 4 to 5 minutes.

I absolutely love this recipe, especially since you only need 2 ingredients.
